I made some deep fried buttermilk chicken tenders tonight. It went against everything I have been trying to do to keep the weight off........But I deserved it! They were sooooooo good. Soaked them in buttermilk over night and just dredged them in seasoned flour. It was the best fried chicken of any kind I had ever made!

Wiz, This question goes out to you.
I'm looking to get a smoker.
I want to start experimenting with some Goa/Portuguese Smoked Chorizo sausages..in addition to the regular briskets, chicken, ribs etc. Ideally I'd like to setup a small rig on the back patio but want to limit myself to either Propane or Electricity for now so that I have better control over the temperatures.
Any particular preferences or things I should be aware of?

Dusty..........There are quite a few electric smokers on the market. You would have to check reviews to see which one my be best. I'm really not sure if there are any propane smokers,other than those that have a small propane tank attached to light the wood box. I have an Orion cooker which is basicly a convection cooker that uses small amounts of woodchips to give a mild smoke flavor to meats while they are cooking. It is a nice product for chicken,ribs ect,and cooks them quite well and fast. I'm afraid Chorizo would not fare well at such high temps. A slow low temp smoke/cook would best for that.

OK fired up the electric smoker and the food dehydrator today.

Not done yet but some pics of the jerky ans smoked meats. Just me and Ms. PT so did some bacon wrapped Jalapenos, Italian sausage, cheese filled and bacon wrapped chicken, salmon and some baked beans.
