Anything that i need to know/do from a technical aspect so I don't have any issues joining the meeting?

Just use phone for audio and web cam/monitor for visual. A few of us have cam issues, but it still works.

At the risk of sounding like an idiot can i just use my headset for audio?

We've had lag issues with audio over the web connection so we went to the phone for audio.

Now, I do have a headset plugged into my phone while doing these meetings.

I'm thinking I'm going to just do the phone part. I don't see why I need to do both, unless you can't do one without the other?

You can just do the phone part, but then the agenda and other shared files will not be visible.
