I get so tired of trying to come up with something exciting for 1 person. Tonight, leftover spaghetti. Yippee

Mike cooked tonight (and cleaned up). A night off for me! He made hamburgers, fries and milkshakes. I love "diner" at home nights.
Idaho, I was under the impression you had a houseful!
Caesarea, I see you dining on tea and cumpets with clotted cream LOLOL
Of course as I have said before, we are easily fooled by on-line personalities.
What is clotted cream by the way..it sounds like cream cheese or sour cream.

    Tonight is porcupine meatballs.

Get about 2 pounds of lean hamburger 20%
Get a box of Zatarain's New Orleans Cheddar Broccoli Rice Mix
    2 eggs.

Mix all of that together and make meatballs and put on broiler pan in oven at 375 for about 25 minutes to brown them and to get rid of some of the grease.

Put meat balls in a large skillet that you can cover and dump over 2 cans of tomato soup and about 1 can of water. Mix all up and let come to a boil and then put lid on let simmer for about 40 minutes until the rice starts poking out of the meatballs.

Make up a pot of white rice and serve the meatballs over rice.

    It's yummy. LOL
I LOVE ZATARAINS!!! anything with their name on it is good

    And those sound yummy

Well, since I wasted my ENTIRE day on the Prize thread....
I took the very easy route tonight.

    Frozen chimichangas
    Frozen Taquitos
    Can of Turkey Chili
Half a can of Jalepeno Bean dip
    and Shredded Cheddar and Jack

Place frozen items in casserole dish
    Spread bean dip over top
Pour can of chili and spread over top
    Sprinkle cheeses.
Cover and Nuke for 10 min or until piping hot.

    Eat.

Not diet food to be sure. And not gourmet, but it was good and fast. Wish I'd had some onions tho...I didn't know I was out.

I made salmon patties, creamed corn, biscuits, and a salad.

Now I'm trying to herd the kiddo into the kitchen to do the dishes.

I took the easy way out tonight. Went to a house that had a traveling chef for the day. This guy just travels around doing cooking demonstrations or cooking for parties at people's houses. He's not a vegetarian, but he's a vegan chef. I didn't know anyone there at all, but figured I'd go anyway as I had nothing else to do. Loved most of the food he made. I did help out and washed lots of the dishes because there were lots of people there and I figured I'd do my part to help clean up a bit. Besides, when I'm uncomfortable (like I was tonight not knowing anyone), it's better when I have something to do to keep my mind busy.
