MaryKay,
That place sounds so cool! We may have to make a special trip just to check it out... Salsarita's is nothing like that but for not so authentic mexican food on the go... I may never go to Taco Bell again- LOL They are a strong competitor w/ prices and amount of food and the factthat you can watch them make it YOUR way... We love it!
Alle, I used to do that and swore I would get back to it... cooking for the whole week on Sunday... It makes things so much easier- especially when you have kids with so many activities and especially if you work also...
You may have to be my motivator...
LOL I missed out yesterday- BBQ- pulled pork, again made from a Pork Shoulder... So yummy! I love it! & that is what we ended up having Friday night too along w/ eggrolls (the frozen kind) LOL I know what a combo- But dueto my daughter haing a friend spend the night and that is what they wanted... Go figure!Last night cuz my daughter went over to her friends to spend the night after her friend was here Friday night... & Friday Morning my 2nd oldest son left for Alabama for a JROTC competition in dance... I don't know why they are having a dance competition- It is Swing dancing... I wish we could have gone though- He won't be home until Monday night! I am dying...
So.. our house consisted of us and my 2 younger boys- my oldest went to a game and wasn't home til midnight so he was kind of absent - til late anyway... A pretty much empty house Saturday after 4 PM here... so we just heated up the BBQ again...
Tonight is Turkey w/ dressing and mixed veggies (just regular mixed veggies.. corn, beans, and such) With a large family we do a turkey or ham quite often so we can have leftovers for a period... It still equates to about 2-3 days and then the 3rd/4th day for scraps I make soup or something that does not need a mass amount of meat to make it stretch...
Oh! & Chocolate cake for desert- My 8 yr old begged- LOL

Tonight is my split pea soup w/ham and a baguette. I use split peas, diced ham, diced carrot, garlic and onion. A bit of Thyme and Bay leaf, clove. Cook cook cook till the carrots, onion and garlic have disappeared

I LOVE split pea soup too!! I've never made homemade split pea soup... I'll have to try it!

I thawed out another of my buy 1 get 1 free rump roasts... and going to follow all the great advise I got on cooking it 'right' this time!

Salad night tonight, lots of sunflower seeds on top! Tomorrow night is dinner out for Mike's B'day..Seafood!.

Mmmm! Love some Split Pea soup! I haven't made that in a long time! Excellent choice.. Could be another to add this week...
Tonight my baby comes home from Alabama... he should actually be calling anytime now- I am anxiously awaiting- didn't think I'd miss my 16 yr old not being around the house so much! So wrong! I am really not going to do well when my oldest leaves for college!
In light of waiting for his call (which first report was he would be here at 4 PM, then 6 PM, now they are calling us...) He gave me an approx location when he called last so we figure around 8 PM... no call yet though so...
Again, anyway- we did heat up the fridge tonight... Mondays we don't normally do pot luck but that is what it is- A good thing though too- Everyone gets what they want or a little of everything...
We have BBQ, turkey w/ dressing, salad and all the fixings minus ready made chicken breast... plenty of bacon though (I buy precooked bacon from Sam's for salads in the 72 pack), a couple pieces of BBQ chicken, fixings for burritos, quesadillas, etc w/ tortillas... (loads of that cuz the girls never made any when my daughters friend stayed over)- I have a small bit of chili dip left too!
I am getting a bit anxious and hope he calls soon!

I'm coming to your house Luv2 for some cake! By the way, my son always calls quesadillas "queezy deals"!

We had a hen party here Friday night. S/O hid in the garage! There were about 8 of us girlfriends. Everybody brought a Mexican themed dish. We had 3 kinds of enchiladas, rice, Dorito salad, mini tacos (the frozen ones), nachos and little burritos. We all stuffed ourselves and had a great time. I think it's going to become a regular monthly thing. We got to have sone of the leftovers tonight.

I keep hoping that someday I'll open my fridge and find an entire potluck

I like to take my roast and put it in the crock pot for 6 hours. Oh it turns out so tender.

There is also a great coke bbq sauce that I will use to make bbq sandwiches. The coke tenderizes the meat. And the bbq sauce is great. Not to sweet not to tart. And you can adjust it to the right taste without screwing it up.

One batch is all you need. No need to add water to the crock pot either. It works all by itself.

I heated up my shepherds pie tonight. It was pretty good. Except hubby bought cream of chicken/cream of mushroom mix. The recipe called for just cream of mushroom. But it still turned out great. Needed more cheese and salt and pepper. I'll know that for next time.
I used a frozen mixed veggie mix instead of celery and peas. It tasted just like a pot pie without the crust. Yummy
