THANKSGIVING! OMG! We'll prepare a brine turkey with all the trimmings and take plates to my parents and her parents....they love it! So do we! oh man, just thinking about those delish turkey sandwiches I'll be eating for days after thanksgiving makes my mouth water...you cannot beat a hot turkey sandwich with salad dressing on wheat....maybe add a taste of dressing in there.....I'm about to pass out with anticipation!

Heehee! sorry Sattec, no one is avoiding you- I am giggling to see your enthusiasm here- We welcome you to post and share your dinners and hope we can give you some ideas for some also- even if you've had it before... how long has it been and it will prompt you to fix up again...
Okay, well, I have been remiss it not posting every day again... we know I have been on the boards but really it has been quick back & forth jolts-
Just to post,
We have had...
a ham dinner one night... (W/ our crew of 7 it is really less expensive to do a whole ham and fixings and then eat on it for a few days...)
So, we did a ham dinner and had greens, corn on the cob (my littlest guys fav), rice casserole, and sweet potato casserole, a salad is always available at our house so we set it out as well. and I made dinner rolls (love any meat on some bread!) So sattec I am with you on some turkey on bread w/ gravy and cranberry- Mmmmm...
We had tacos another night and I made fresh salsa... BTW- I just saw something I want... LOL I will post about it too... all fixings for taco as most people do... nothing out of the ordinary...
Then we had a pork roast... (yes, again- LOL I think it seems we have those quite often but I love them) - We did the roast w/ potatoes & carrots, broc & cauli, & crescents....
Yesterday I shredded up some of the pork for BBQ (no vinegar) and today we had that as well as today I made some dip... Ground beef, 3 cheeses. left over homemade salsa and black bean and corn salsa... Just mix it all up in skillet over med heat (after browning ground beef)- w/ tortilla chips it is great! I add jalapenos for my husband and kids (I can't handle them)-
Tonight we are having breakfast for dinner (this is a very "off" Sunday by the way) Eggs and bacon w/ cheese on grand biscuits and waffles... All I have energy for.. (LOL) - I have not been feeling well the last few days- Could have been the food- LOL j/k - Just a little crampy is all-
Hope tomorrow I will feel better- I have a huge amount of clothes to fold... I also need to take a huge amount to the dry cleaners I have been putting off forever!
We will be in Virginia Beach for Thanksgiving w/ my mom so we are planning the menu... and I have to make sure I have necessary items to travel with as well-

We used to make something similar. We called them straw hats. It was useful when you get a box of broken taco shells. Crumble taco shells on a a plate, top with taco seasoned hamburger. Then add the toppings of your choice. We liked lettuce, tomatos, grated cheese, sliced black olives and sour cream. Mike and my son had to have hot taco sauce too!

I've found that if you stick the taco shells in the oven @350 for about 6 min. they get nice and crunchy too! We use "Morning Star veggie burger crumble" in place of the meat. It has the same texture as ground beef, but the bonuses are it's already cooked so just heat, add spices and a pinch of water. Makes a really fast taco meal. It's also lower in cal, and I have fed it to many beef eating people, and have had only complements. I use it to make homemade chili too.

We make alot of fresh baked breads too! Sometmes we'll just make a loaf of bread or dinner rolls in the middle of the day for no reason...just to snack on them! I also make killer pancakes too ( so she says), I just follow the directions and get the giddle the right temperature (very important), and they sure do rise up and are nice and fluffy...

Love my breads- & I don't have a bread machine so all is purely home made!
I also do chicken tacos... never did a veggie crumble... I have seen the morning star brand though- I guess I should check it out, would be a nice change -
Still thinking when I can get a panini maker like MK! LOL I told my husband about that too... I love panini so much- I have some bacon left over from tonight (had to bat the kids to get them to leave any)- We may have to have panini tomorrow for lunch... I also have a bit of chicken breast already cooked off from our Quesadilla Explosion salads... take that out of the freezer and the bacon w/ some provolone or swiss, a few cherry tomatoes sliced and mixed greens... hmm what kind of sauce... Well, I am good w/ Bacon ranch- hubby may want a pesto or something... that sounds good for tomorrow lunch...
Tomorrow night is still up in the air but we are doing a banana pudding tomorrow- scratch except of course using nilla wafer cookies... Just gotta use some bananas and my son asked -please, please make banana pudding... so we are... Dinner... well, I am still thinking- I hate to commit in case I want to change my mind- LOL

Last night was ham slices with potato au gratin and green beans. Simple with some apple sauce! It really hits the spot. Tonight Mike is making hamburger steaks with baked potato and creamed corn (I don't care for creamed corn so I will have beets! He doesn't care for those).
Mike is the pancake maker around here..so for breakfast nights he makes nice fluffy pancakes that I will have with sugar free syrup. Not bad at all!

Mixxy, we use roast (left over) for this dish. I skip the chilies. I also don't bother to remove the veggies..they cook down for the most part anyway!
You can use pork or beef BTW.
It is pronounced Rope-a Vee-a-ha
Ropa Vieja
Ropa vieja means old clothes in Spanish. This meat is cooked, shredded like rags, then briefly cooked again which gives it the Spanish name. Remember that Cubans love peppers, both fiery ones and the green bell peppers. - 2 medium onions
- 2 pounds falda - (skirt steak) or flank steak
- 1 carrot, coarsely chopped
- 1 celery stalk, coarsely chopped
- 1 bay leaf
- 2 tablespoons olive [COLOR=#993366 !important][COLOR=#993366 !important]oil[/COLOR][/COLOR]
- 2 garlic cloves, minced
- 2 ajecito chiles, minced
- 2 green bell peppers, chopped
- 1 cup fresh plum tomatoes, seeded and chopped
- 2 teaspoons dried oregano
- 1/2 teaspoon cumin
- 1/4 cup parsley, chopped
METHOD
Heat oil in a large skillet. Over medium heat, ook onions, garlic, chiles and green peppers intil softened, about 10 minutes. Stir in 1 1/2 cups reduced broth and tomatoes. Cook for 15 - 20 minutes over medium heat. Stir in shredded meat, oregano, parsley and cumin. Cook 10 - 15 minutes more.
Serve with white rice.
Serves: 4 - 6
