    Thank you for the Ropa Vieja recipe MaryKay! It sounds so yummy... and I do love peppers & chilies -- I LOVE hot foods!

    My great-great grandfather used to sell hot tamales on street corners.. and when I was a kid we had big family tamale making parties. I still have the family recipe, but have never made them since becoming an adult.. it just seems like too much work for one person to take on.. .and my sisters didn't like them enough to help me.

    Grey cold day here. Had to be at work at 5am but am off tomorrow. So I've got a pot of chile [yes with beans] on the stove. Going to make some cornbread to go with it, yummy!

    MaryKay, sometimes I wonder how we will cook when all the kids are gone...
    You guys seem to still have great meals and so easy and quick!
    The Ropa Vieja a bit hot for my blood but hubby would love it!
    We had pork loin the other night but sliced into individual portions before cooking rather than cooking as a loin roast- Very good- I smother mine in red and green peppers, onions, and mushrooms w/ buttery potatoes on the side- Mmmmm!
    Last night was Taco Salad! I love Taco Salad and it's great when you have veggies that need to be used up fast- I usually stand by a recipe of sorts but when things need to be used up... throw it in the Taco Salad! LOL It always turns out great! I had 2 helpings- one at dinner and last night while sitting here scanning threads I needed a snack and had the last bit that was left... Just heated up, pulled out some lettuce and tore it in pieces by hand and added some broken up shells and chips... It all tastes the same- LOL
    Tonight was chicken strips and nuggets w/ homemade fries... Shouldn't have been but kids were out today for Veteran's Day- we talked about going out since Hubby got free today but decided not and then the kids were disappointed they didn't get to order chicken strips- LOL
    Cut up 4 breasts, sliced, chunked, and split... breaded them up and fried and then cut up a half bag of potatoes- julienned for fries - that was it! Oh! I made 3 sauces for the dip... just some mixed condiments of variety really... I told hubby it was an expensive fast food meal- LOL
    The kids enjoyed it- & I have a bit left over for a quick salad!
    Sattec, Free Pizza is always a great dinner! Anything Free and not needing to be prepared/cooked... LOL

    cornbread and beans tonight! pinto beans and cornbread with 1/4 cup of sugar in the mix (it's a southern thing!) and fresh baking powder.....yummy...this is too easy, just come to this thread and get an idea!!!

    We did roast chicken tonight w/ brussels and mac n cheese... easy and quick... Cool for me since the kids have so many things going on- tonight is just a major homework night- before tomorrow- Friday... 3 have projects due- still have things to finish on them... one has a packet to finish for History and a paper on FD Roosevelt, and my youngest has to do an art project for his classroom to hang in the middle of the school... 2 of these assignments were just assigned today for due date tomorrow! I hate that... others have been working on their stuff and almost done but those last minute finishing touches... I tell ya, they can kill a project... I am beat- tired out- run down.. so I am laying in the bed w/ my laptop and watching CSI as I type this... LOL
    Mentalist up next and then read a bit maybe...

    Sweet cornbread! I need some now! Thanks a lot..
    Last night was BLT's..I add a slice of avacado to mine..it's in season!
    Tonight was a nice southern dinner, chopped sirloin patties grilled and rice with blackeyed peas, chopped onions on top and a dash of hot pepper sauce. I grew my own peppers and put them in vinager. All I have to do is add vinager every so often! We also had some carrots with brown sugar added.

    tonight is steak (grilled), I'm gonna rerun the au-graten potatoes and throw in some homemade dinner rolls...we love peas so I might the do peas too .....lunch was a chili dog....

    made crab & lobster ravioli with pesto sauce .. costco is my friend. quick, easy & delish!
