chicken in foil is super simple. I've used both bone in and boneless, but prefer boneless skinless chicken. Last night I used 4 chicken thighs and half a chicken breast. Compleatly thawed chicken is best for this, otherwise it's not as tender and juicy.
Take one good size piece of foil (enough to generously wrap your chicken parts) drizzle the middle lightly with oil to prevent sticking. Place your chicken in the middle of the foil, season (I use a LOT of garlic and a few other assorted spices) then fold the foil. You want to fold it so the chicken is well sealed into the foil. Sometimes this takes two pieces of foil for me. Cook at 350 (ish) degrees until the chicken is done. I'm not sure how long "done" is, I have a nose for food that's reached it's done point and rarely need to check the time. When your chicken is done GENTLY unwrap the foil (Steam hurts) and voila. Super easy peasy and tender. WE've made this in campfires too- great camping food. Can be done with just about any meat.

Does the chicken brown at all? I have to think of other ways of cooking since my Dr wanted to put me on diabetes med. He is giving me 3 months to get my weight, cholesteral, and blood sugar down. I LOVE LOVE LOVE breaded foods and HATE HATE HATE veggies!!! Day 2 and I'm almost sick of salads! Fried pork loin tonight...no breading...blahhhhh...
Also not a big fan of tomato based foods. Like spaghetti but only like every 4 to 6 months. I did find a recipe for making cauliflower into rice that we are going to try.

With my luck my ship will come in and I'll be at the airport.

Did your doc give you a guideline of foods to eat for those conditions? I know oatmeal and cheerios/etc are supposed to help with cholesterol. Of course you have to cut sugars to keep your sugar down, but raw (not salted or sweetened) almonds will also help keep your blood sugar stabilized if you snack on them throughout the day.
I'm dreading the day my doc says to me, no more breaded foods/starches!
I do LOVE veggies though...but not nearly as much as the starches LOL!
Tonite's dinner was just me, so it was pizza from the little mom and pop place here in my tiny little village. White Garlic with extra mushrooms, it is DELISH! Ordered a 14 inch and ate 3/4 of it! Good thing I don't do that often.
All this past week, we had home made tacos. (burritos, as I buy the big 12" Azteca flour shells) They are my son's favorite, so I bought a TON of stuff to make them. I didn't know it would last all week, but it did! We had tacos from Monday through Thursday!

notsogood- It browns for me. Depends on your oven. I don't bread any of my foods as I have exciting digestion issues- so my chicken is dressed just with a touch of oil and a lot of seasonings.

When I first got diabetes..in the stone age..lol.. my Dr. said to me "Eat fish, soup and drink water..lose weight!" Great advice..concidering my triclycerides were over 1,000! I could have died! But I found a decent Dr. who gave me the whole diabetes training..which I threw out the door. Drink water and eat cardboard..weigh every bean..Blah blah. I eat what I want, within reason. I limit my sweets to a now and again treat..a bite not a whole cake! I eat fried foods once in a while and make sure I cook with a good oil like olive or vegatable. I drain all fried things well on a cake cooling rack set on a plate. Yes I do bread some times! Grilling is great though..try a panini maker that have varible settings or a George Foreman.
Try grilling your veggies with lots of seasoning. If you just can't do it, get some of the V8 fruit juice that hides veggies. Just make sure you get lots of fiber on the side! Fiber helps you lose weight. It absorbss fats and moves them on out!
There is only one way to lose weight..close your mouth and move your booty..no big trick. I went from 190 to 150 by walking and using a luncheon size plate for dinner. Snack on things that are sugar and mostly fat free..vape to fill in the gaps! Water helps to fill you up and clean you out. Drink a glass before dinner. But until you get your life in order..try ALLI from the Pharmacy. You will have to go to the bathroom if you get too much oil or fat in your diet..sure fire way to learn!
Good luck. There are several diabetics in the Wrecked and Bonkers forum..they helped me when I had to start using insulin. ( no biggie by the way..But I am scared of needles).
Start a diet thread in here..lets see what every body else does.
