Just me and the boy here. Due to his condition he's a super picky eater so no dinner making tonight....
I wish the girlies were here...wish hubby worked an earlier shift. Ah well at least I don't have to clean up a mess.
But I need tacos! I need them or I will explode, That happens to me sometimes!

I tried making risotto tonight! Turned out pretty darn good too, served with polish sausage (probably an odd choice, but it was the meat we had thaw, and I REALLY wanted to try my hand at risotto.)

We're having do it yourself tacos (or in my case, tostada) with the leftovers from last night's taco dinner.

Last night we had my standby comfort dinner -- Creamed asparagus on toast. Simple and I really love it. I've made it with fresh asparagus on occasion, but the canned is what makes it my comfort food. The problem is finding good quality canned asparagus. Most have lots of very woody pieces in them. Green Giant is good as is Del Monte, but both are very hard to fine in the stores around here. The Pick and Save chain has taken over the area. Bad.

Tonight is back to the tacos to finish off the meat and beans.

Salad...that's about all I eat anymore. W/ canned chicken, yellow bell pepper, celery, sunflower seeds, and ground pepper when I remember it! Pretty tasty as salads go but I'm really missing potatos, pasta, bread, and anything else good. Will probably have some pork loin chops tomorrow night! And yes...with a salad.

With my luck my ship will come in and I'll be at the airport.

Brinner (breakfast for dinner) pancakes, fruit, juice...easy cause mommy is tired and has to be up very early for a parent-teacher conference and to meet the plumbers.
