    We have a Casa Bonita here, too. I think the restaurants originated in Oklahoma City, but they're down to two now. My kids used to love it there, but I don't have impression that the Tulsa one is so great anymore. Sold once, then rebought by the original owners, I think.
    Anyway, I remember those sopapillas! Yum!

    I've been so bad about cooking since my roast ordeal, we'd been eating frozen dinners But I finally made lasagna tonight.. so we can eat on that another few nights.

    Kristin - Yes, I do use cottage cheese in my lasagna

    Allestaria - If you've never made lasagna.. it can be so easy! I always make one where you don't pre-cook the noodles, they just cook in all the moisture of the sauce and cheeses.. so it's so easy to throw together and just bake!

    I can make a lasagna..but the MichaelAngelo brand makes a great sausage lasagna! All I need to do is make the salad and garlic bread.

    MaryKay - Have never tried the Michael Angelo. Is sausage the only lasagna they make? I have this weird problem with most sausage.. it makes me BURP for hours... really bad! I think it's something with the spices they put in it.... but not sure

    I might have to google some lasagna recipe's and give a few a try.

    Tonight I ended up having to turn to yucky hamburger helper. Sausage flavor. Tasted more like a knock off of spaghetti and meatballs. Very little flavor.
    I had company that was here till 6. So I couldn't fix my baked pork chops. Hubby is not a happy person if he eats later then 7.

    I love making homemade sopapilla's. Oh they are soo good. My Chli Reno's rock too. When it comes to chili I can make it 100 different ways..LOL
    Chili Verde that one is good too. Humm maybe I'll make that for dinner tomorrow night.
    Ok enough talk about food I'm getting hungry and its 1am..

    MichaelAngelo's makes several kinds of Lasagna..even veggie.
    Tonight was round steak cut into thin little strips, fried with green peppers and onions on hogie rolls with provalone mealted on top. heartburn but very tasty!

    I'm actually fixing something today for tonight...in the crockpot (that's my favorite way to cook, lol). I cooked some chicken thighs and breasts yesterday in order to shred it for use in making White Chili.

    Never heard of white chili.

    Today I made up 4 casseroles for the week.
    Spaghetti pie, Shepard Pie, Green Chili Enchiladas, Burrito bake.
    Was going to do a cheeseburger bake but decided against it as I'm not sure how well it would bake up. So I'll just make that one next week.
    Also got a 12lb brisket to do this coming weekend.

    I have been wanting to bake up everything in one day that will last me for 2 weeks. These turned out to be enough for 2 days each. So besides the 2 (brisket and cheeseburger pie) I have 8 days worth of dinners done in 5 hours. And with the others getting done I'll have 12 days taken care of!!!
    Maybe even 14. Depends on how much that 12lbs brisket turns into and how much hubby decides to eat.
    The only thing I will have to fix is the sides. Which wont be a problem.

    It takes me about 2 hours a night to fix dinner. I have to fix so much for a family of 5 its unreal. To give you an idea how much hubby eats. 24 taco's just for him. 2 1/4lb hamburgers from Micky D's 2 large orders of fries.
    Now don't get me wrong he is as thin as a cucumber. 6'2 and weighs in at 148lbs. Does not work out. He is a house rat. Pisses me off.. LOL
