Coughing probably causes you to exhale quicker than you typically would, causing more vapor to run across your pallet in a short amount of time versus regular exhales. Also, don't forget vapor is actually water vapor... (Don't believe me? Hold a paper towel to your mouth and exhale a hit of vapor, you'll be surprised how saturated that paper towel becomes) so there's probably more water (and flavor in that water) deposited in your mouth at one time from the quicker exhale.
