I had mixed a beautiful caramal custard sweetened with stevia. It's been around a few weeks and now it tastes musty with very little sweetness. What happened? I thought it would improve with age.

50\50, 8 mg\ml and 20% flavor, i put about 8 drops of stevia in a 90 ml batch. The flavors were custard, caramel, marshmallow, and vanilla from flavor envy. All my other bàtces from the same time period are fine.
That's odd. Did you taste it after adding the stevia? Or just prior?
Typically, complex juices like the one you made get better with time. I would let it air out over night. Remove the cap, and store it somewhere for a few hours. See if that helps. I made a clone of Andromeda. Initially, it was great. After a few days, it tasted floral. It smells better now that I've let it air.
