You can always do it with just one shot. I know when I first learned I wanted to HDR everything (wait, I still do), I re-edited some of my old jpeg files. I made 3 copies and ran them through Photomatix. Photomatix will ask you to choose the exposures from a drop down menu. It's not as crazy looking, but it still worked.
