ZAP = 7/64 ... although you could do with 1/8 and some 400 grid sandpaper. The RSST is good on 1/8, although some people have said it's a bit tight. Also, the wicks are not always uniform in size either, so keep some sandpaper nearby.

Some yards will sell off the roll by linear foot ---> EPDM Rubber. Some O-rings are manufactured from it.
With scissors, cut out washers for center post as well as gasket for top of PP tank and plate.
EPDM is very heat resistant, and not attacked by anything in e-liquids.
And that is another interesting question since the January wicks in my book do not even remotely perform as well as the March ceramic wicks. So are they bringing back the earlier wicks in a slotted version? I hope not, as the current ones are the best so far.

Your call. Personally I find I get a smoother vape when the coils are evenly spread out from top to bottom. But it may take a little longer to kick up the vape on 28ga Kanthal. Tight wraps vaporize the juice faster but you are also potentially prone to dry hits. Your vaping habits are your best...

You cannot go wrong with 30ga Kanthal and a 12" by 12" 500 stainless steel mesh sheet.
