    Still very new to this myself, but all I know is the kona cream juice I bought that was awful is, tonight, quite palatable after some rest in my bedroom drawer. Still needs a little sweet or cream, but a pleasant coffee flavor nonetheless after some chill time.

Don't quote me on this, but I believe many flavorings are alcohol based so a steep would allow some of the alcohol to evaporate and mellow out the flavor without that harsh, astringent, alcohol...
