For me mechs are best with small simple wire builds for fast ramp time and good production. Big multiwire duals are best in regulated mods.
Dual battery mech mods are a level of attention I just don't want to pay.

If it gets hot enough, it might release some chromium? But that's used in all stainless steel, so I'd bet you'd get more out of your cars exhaust system.
Cooks routinely sear meat on SS, probably not at 500 C but I don't take my coils that hot either. So a dry burned skillet at well over 500 F. Be sensible and no problem. Why do you want to heat your coils so hot?
With dual coils you cut resistance in half so .32/2 is .16. Amps=V/R, so like 26 amps. A 30 amp battery would be "safe" but being new to mechs I wouldn't until you get some exp points under your belt. I generally recommend like .5 builds to get your feet wet to newbies.
