there are already some monstrosities out there capable of 3kw, they're pwm boxes and use several batteries in a series/parallel configuration so you can build super low and also get the higher voltage from the battery packs being in series.

It'll be just fine even up to a year or longer if it hasn't seen too much sunlight, you'll know when it goes bad. Juice tends to get super thick and take on a dark brown tar color when it goes bad.
