    So an observation from last night's mixing. Too much cinnamon can over power a mix. Going to try with less cinnamon. See if that does not help things out.

    Ice cream 2% Custard 2% Whipped 1% Bavarian 1% Also depends on the recipe. I honestly do not go by percentages any more. I go by smell.

    Here is a base I use that has worked wonders for me: Vanilla Bean Ice Cream Vanilla Custard Whipped Cream Milk Bavarian Cream All from FW and makes such a creamy and decedent base.
