Perfuminess is a big negative for me. I hope it steeps out for you, but in my several mixes where I tasted it, it didn't go away even after months of sitting around.

Part of it, though not all, was these insane lockdowns.
Farmers, producers, couldn't get as many workers as needed, couldn't get as much transportation as needed. Ended up culling their crops/animals. So, lower supply. So higher prices.
