A new "What's for Dinner?"

We are eating healthy due to diabetic diagnosis...mine isn't so bad yet, but my partner is on pills now...

so we created this and it is delicious! and filling..:)

tuna... drained..(we use solid white in water)
avacado ..mix with tuna as you would mayo...to your taste..
add chopped onions, and tomatos, mix and set aside...

cut a cucumber long wise (you can peel ...we peel it like stripes..lol)... scrape out seeds...load tuna mix on the cuke covering
the entire top..pressing down if needed...top with a couple of thin avacado slices... top that with shredded pepperjack cheese
(you can use cheese of your choice)...top cheese with with a couple of tom. pieces...salt and pepper..bake at 350 for about 8-10 min...

Debb -- I have a cake recipe that you will love, and it is low carb!

buy a round angel food cake, a box of sugar free white chocolate jello pudding, and some berries.

Make the pudding, and if needed, slice the berries.

Cut the angel food horizontally in half. Pour a small amount of the pudding in between the layers and add a small amount of the berries. Put the top layer back on, pour the rest of the pudding over the cake and add on the berries.

You won't even know it's low carb, it tastes so good! My father in law is Type 1 and so is my daughter. He came up with the recipe and it is soooo goooood!

The way we do it... because this is what her endochronologist taught us... Carbs are Carbs. Some might take a little longer to process than others, but they are still processed the same way. So I don't know if our method would work for type 2, since we count ALL carbs in my daughter's diet for her insulin. So far, it's working. So if you guys are suppossed to be lowering his blood sugar levels, look for things that are low in Carbs. Read the labels, and don't subtract for fiber, or anything like that. Also -- measuring cups and spoons will help keep you on track. A half cup of ranch style beans is usually about 20 grams of carbohydrates. Doesn't sound like much, but when you measure it and THEN put it on the plate, you will see that it is actually quite a bit! (BTW Mac and cheese is 50 grams per cup. Adds up fast!)
