I just got the sigelei Fuchai 200w mod. I have a choice of 4 batteries. The Sony vtc4, vtc5, LG he4 it the sigelei 35a. Which one of those four is the more safe to use? I've read the battery chart and I'm still not sure

Any of the first 3 choices would be fine as long as you are buying them from a reputable vendor.

In other words, you want to be as sure as possible that they are authentic.

200watts you'll need true 30amps or ones that can wiggle that high.

Sony VTC3 - True 30amp CDR, 1600mah
LG HB2, HB4, HB6 - True 30amp CDR, 1100 to 1500mah
Nothing rates higher in true CDR than these 4 batteries.

Sony VTC4 from your list is very flexible and can handle the 30amp load up to about 180watts only though, so out of your list the VTC4 all the way.

Buying from authorized resellers like ILLumn.com, Liionwholesale.com, RTDVapor, Orbrtonic, or IMRBatteries. Depending on the vendor you are buying the mod from, a lot of the well known online vendors like MyVaporStore and couple others sell authentic batteries most times. The five I listed all have a great track record here on the ECF. After that it is a matter of checking the codes on the wrapper of a cell, the Sigelei 35amps are re-wraps, so don't even give them a consideration, everyone buys from Panasonic/Sanyo, Sony, LG, and Samsung anyway, stay with the A bin authentics.

Best way to be safe is to buy from reputable source IMHO

Might want to email or phone Sigelei (reps?) and ask them which manufacture they recommend to go with the mod type you bought. Those folks should no which manufacturer shines with their equipment.
