Berry boosters/brightener

    Been playing with a new recipe containing the following:

    3% Boysenberry Preserves (PUR)
    5% Vanilla Bean Ice Cream (CAP)
    2% Vanilla Whipped Cream (CAP)
    1% Marshmallow (TFA)
    0.25% Super Sweet (CAP)

    Tastes pretty good in an rda after a 5 day steep, but it just needs something to bring out the berry a bit more.

    I added 1% marshmallow, which helped. Is there another fruit that will brighten a berry?

    I've got some apple, italian lemon sicily and strawberry flavours

    TFA dragon fruit is what I would try first, 0.5-1%. TFA greek yogurt is a good option for adding an overall tart/bright note. WF yoghurt drink might work as well but use low as it can take over with time. Since you have the lemon try it first. I'd just put a few mls in a separate bottle and add the lemon a drop or two at a time.

    What does it need? More sweet? More tart? A tiny bit of dragon fruit might pop it.

    Sweetness is great, probably could be a bit tartier.
    It's fine as a dark berry ice cream, but I'm not just tasting the actual boysenberry. I'll do some playing with the suggestions

    A couple random thoughts:
    The descriptions I read for PUR Boysenberry Preserves, are a cooked jammy type of berry flavor. To me, that is not going to replicate a fresh, or bright boysenberry profile. To amplify that (if that is more of what you are looking for), I would probably look at adding a low percentage (≤0.25%) of either FLV Boysenberry, or PUR Boysenberry. Or, a realistic raspberry (INW Raspberry would be my choice; also at ≤0.25% ) could help to lighten and brighten the darker berry profile.

    The next thought was; that is a lot of cream, for a single (mid-strength?) fruit to wade through. I am not surprised you are getting a berry ice cream. If you are wanting a more berry-forward recipe, I would consider reducing the two creams 10-20% of their original percentages (so, 4-4.5% for the VBIC; and 1.6-1.8% for the VWC). Or, as an alternative, you could probably get away with boosting the boysenberry by 0.5-1.0%... though, I personally would try lowering the cream first.

    And, my final thought was; most of the detailed reviews for PUR Boysenberry Preserves (that I could find), mention it needs two weeks (or more) to fully develop. You mentioned only 5 days. The first thing I personally would be inclined to do, is nothing. Let this mature, and stabilize, before deciding what adjustments might be useful.

    Because I have zero experience with PUR Boysenberry Preserves; this is entirely speculation on my part.

    I'll give it a bit longer to steep. ;)

    My next order was going to include PUR boysenberry and PUR raspberry. I thought the combo of the two PUR boysenberries together may work for the above boysenberry ice cream mix - so thank you for confirming that. I'll also lower the cream base in the next tester.

    And dragon fruit is on my wishlist

    I don't know about conformation.... you are the one with actual experience.:D My opinion is more aptly defined as "wild-arsed guessing." It is merely where I would start if I were in your shoes. I have no idea if any of it will actually work. :lol:

    Progress report:

    First of all, thanks for all the suggestions, I've screenshotted this thread for my next mixes :thumb:

    Mix has now steeped 8 days and the boysenberry has come out to play :oops:

    Ordered purilum raspberry and I'm dying to try that out now - love raspberries even more than boys.

    I'm waiting patiently for the order to arrive and letting my boys ice cream steep a bit more :angel:
