Think that's just personal taste; but would say I find cinnamon the same. My French Toast - Cinnamon Danish Swirl (Cap);2.00%; Waffle (TPA);10.00%; Vanilla Swirl (TPA);4.00%; Meringue (FA);1.00% moved cinnamon danish from 4% down to 2%.

My Deadly Sin ish (combo from various recipes) downed the danish from a pretty standard 4% down to 2% -
Cinnamon Danish Swirl (Cap);2.00; Butterscotch (TPA);5.00; Vanilla Custard v1 (Cap);2.00; RY4 Double (TPA);5.00; Cotton Candy (10% EM/Ethyl Maltol) (TPA);1.00;

I just know if I use cinnamon that I will probably want to use it at less than the average mix percentage.

I make e-juices and I have noticed that cinnamon recipes are a little spicy, I know it's normal cinnamon to have this spicy flavor, but I see that others don't, like Loaded Glazed Donuts, Pretzel, Churrios that are very soft ... I usually use cinnamon sugar cookie at 4~5%, I tryed cinnamon danish but didn't like the flavor.

If you're looking for a "soft" cinnamon flavor that works well in bakery and dessert recipes then grab some Flavorah Rich Cinnamon. It's extremely concentrated but very soft tasting - 1 or 2 drops per 30ml is plenty.
