I gave up custard a while back around the time Dr Farsalinos dropped the AP bomb. Since then, I must have tried about 30 different recipe combos to try and make a good custard and bought every DA/AP free custard/bakery flavour available. A couple of mixes came close to making a good custard but most went in the bin. I gave up, thinking it couldn't be done. This came out by accident when trying for a toffee banana.
Some notes on the recipe for you non believers. Firstly none of these flavours contain diacetyl or acetyl prioponyl. The key ingredient is the maple syrup, while it does obviously taste of maple, the addition of the caramel overpowers the maple in the finished mix and combined its more like a dulche de leche effect. Two drops of sucralose is sweet enough. I also added a few drops of saline to bring out the flavours more. For steeping, longer is better. Probably about 2 weeks minimum.

Capella Vanilla Custard V2 - 10%
Capella Caramel V2 - 5%
Flavourart Maple Syrup - 4%
Sucralose 2 drops per 10ml
Saline 5 drops (optional)
