I had a dinner party for 16 people tonight. Made a pasta I've modified from a Rachel Ray Recipe
INGREDIENTS
3 leeks
4 Shallots
2 tablespoons EVOO - Extra Virgin Olive Oil
1lb Applewood smoked bacon, thinly sliced
2 bunches of garlic, very thinly sliced or chopped
salt and pepper
2 Tablespoons of Italian Seasoning (oregano, parsley, basil, etc.)
2 28 ounce can Italian tomatoes puree
1 cup flat-leaf parsley, chopped
1 pound spaghetti
Freshly cubed Mozzarella and Provolone cheese
1 cup of fresh basil, thinly sliced or chopped
Cook the bacon, add leaks, garlic and shallots and saute. Then add every thing but but cheese and basil and slow cook. Just before serving, add the cheese and basil.
