Did a homemade chicken pot pie tonight, it was so good, the whole thing disappeared!

I already take potassium (and magnesium) supplements because I have a long history of debilitating leg cramps (where the muscles completely seize up)--usually in the middle of the night. Bananas, which I love, are too high in sugars for my diet, and don't provide enough potassium to make it worth it for me. I really think that the main issue is that I want to be in great shape RIGHT NOW! Yeah, the "instant gratification" thing has been a recurring theme throughout my life!

I love chicken pot pie. . . also not on my diet.

I have to say that I'm really proud of myself as far as my diet (and exercise, for that matter) has been going. I wish I was losing weight faster (it used to be so easy in my 20s), but that's just a fact of life when one gets a little older. Admittedly, I haven't weighed myself for several days (I'm a "daily weigher," and that's one of the things I'm trying to get away from--weekly, I think, is a better indication). I haven't "cheated," nor have I really been tempted. It's funny how easy it can be when I put my mind to it. I finally got so fed up with myself--that was all the motivation I needed, I guess! I guess another way of putting this, that I know some of you will "get"--I clearly hit my bottom. Aside from not being able to get into most of my clothes, I really would like to live to see 50 (after having a heart attack at 44).

5. Yes, it would be easier that way. I did cheat with frozen veggies and pillsbury pie crust. There was a nice sale on chicken breast so I did that from scratch and I also simmered fresh celery, onion, broccoli and carrots in the butter for the homemade sauce. I have a bit of a phobia for cream of "whatever" soup ever since I started being conscientious about ingredients in the products I buy. It's pretty scary when you learn how much garbage they hide in our food. :shock:

yasmin, we used to make pot pie often, but we cheated and used bisquick for top ,cream of chicken soup and frozen veggies with already cooked and cut up chicken. used to take about 15min to put together and not long to cook it. dinner done and actually was healthy with mixed veggies and chicken.


Good luck with those leg cramps Doc. You've got some tough restrictions there. :(

Funny, I'm just about to make a ham/cheese omelet. I love breakfast for dinner.

Nah, my restrictions aren't too limited. In fact, far less limited than someone who follows a low fat plan like Weight Watchers. On my low carb diet, I don't limit my fats and proteins much at all. I just stay away from starches and sugars. Bananas are exceptionally sugary as fruit goes. I actually didn't realize this until just a few minutes ago, but I eat an avocado almost every day (assuming I have ripe one on hand)--they have even potassium than bananas. But, yeah, there are a lot of things I like about eating lower carb; not feeling deprived is near the top of the list. (Okay, I miss french fries.)
