Well, it got very educational in here!

My day’s pursuit was not so intellectual. Anyone who knows me knows I am a freak for pretzels. It’s one thing they just don’t have much of in the West. Must be an East Coast Thing.

Since I can’t get good ones, I have to make my own. My old favorite was Snyder’s of Hanover Sourdough Hard Pretzels. Then it was Unique Extra Dark pretzels. My old teeth just can’t take hard pretzels anymore.

Since I have to make my own, I tried out a sourdough soft pretzel recipe. Absolutely yummy! Better than a Philly street vendor (and that’s among the best).

Turns out the secret is to boil them for one minute in water and baking soda before you bake them Who knew?

The first batch had sautéed jalapeños, garlic and Parmesan. This batch I skipped the jalapeños. I’ve had three total and must stop! I don’t even have anymore room to have a beer!

I was a fool!

Your explanation was by far the clearest I've seen of the concepts. I've encountered info like that but you're the first person to make a breakthrough into my thick skull on it. :)

LA, did you know bagels had to be boiled also?

I didn’t know that until I found out about soft pretzels! The boiling water went POOF when I added the baking soda and I wasn’t expecting that either.

They bake at 475 and I didn’t properly dry the first batch before putting them on a baking sheet. The bottoms all stuck fast even though I had semolina sprinkled all over the pan. Next batch I found out from a bagel discussion how to prevent that. One minute rest on a towel and you’re good to go. What an adventure!

I wonder if the pH change has something to do with the dough... hmmmmm

anywayyy... went to get my brake tag a couple of weeks ago and was turned down due to a couple of cracks on the drivers side... checked out prices on windshield replacement and OMG!!! its gonna take me 3 weeks to save up for it. Since I have the wifeys dead car in the backyard and it has a good windshield.... lets just swap out windshields.. :)

after 3 hrs of work "trying" to get the adhesive loose ( really good stuff, wonder why no one sells it) Im beginning to get tired and a bit uncoordinated .... and a simple slip of the fingers and crack.... Oh sheeeet... now theres a 10" crack on the passenger side upper corner running down towards the center... ( well at least its not in the "critical view area").

Im also finding out ( the hard way) that there are pins and clips all around the windshield cleverly hidden by the black masking ( to hide the adhesive joint) that are impeding my progress...

you would think that if one puts a youtube video up about windshield replacement on a smartcar, they would at least mention the hidden clips and pins.... think Ill go back to those videos I watched and post replies about it...
something to the nature of " Beware of the hidden pins and clips at the top corners and bottom center, they will be in your way.... and dont try this when tired" o_O

Our water is pretty bad! We had to replace the kitchen faucet and we asked the plumber how often on average people have to do that here. He said 6 months to a year! Figuring he exaggerated a bit, I’d say every 2 years or so wouldn’t be surprising. Mineral build up is bad. Chlorination smell is bad. And the water dries out your skin pretty bad.

Hey! Philly water is bad too! Maybe that’s why they tasted as good as a Philly street vendor’s! :)

I looked up local regulations about home bakeries. I’m disqualified. There can’t be any pets on the premises. Otherwise I might actually start selling snackage. Crackers and pretzels! Baguettes too! Artichoke, Parmesan sourdough bread! I could do well!

It is hard work to try to do all day every day. I walk around with flour on my shirt most of the time as it is.

LA, life is too short not to do the things you love. If this makes you happy, find a way to make it happen.

You are so right! Anything is possible. I can tell you that these days I enjoy dough a lot more than I do technology. :)

I’m open to possibilities. In the meantime I’ll work on honing my craft and enjoying eating the goodies that result.

I just wish y’all lived closer so I could share. ;)

Around here, they have commercial kitchens set up for small businesses to rent space and cook their goodies with the professional equipment. If you decide that you want to give your dough a go, maybe they have something like that in your area. :thumb:

LA, is it possible to work part time in the food industry? That way you could get your feet wet so to speak, without diving right in. Sometimes the grass is greener on the other side of the fence. It may be fun to play with on your time, but quite another to have a full time job of it.

Regardless, I am happy to see you enjoying yourself. I wish I did live closer. I would volunteer as a taste tester for you, in that case for sure!
