I put about 7 bottles in the closet, took off all the tops and it's been about 2 days, should I shake them and keep them open or can I just close them up and throw them in the storage?

Either or. Shaking won't hurt, though it may help. Once again, the BIGGEST factor is time. You may want to keep them from being overheated, especially for extended periods. That is no good. Luckily you stay in a place with frigid temperatures. ;)

Cap those babies, order more liquid, rinse and repeat.

This is what i do..

Bottle cap and dropper off.. Leave in closet shelf for 2 nights. Before bed on each one of those nights i put dropper and cap back on bottle and give it a good shake. Then, bottle cap and dropper off again. Then close it up again and leave in closet for a week, or a few weeks if i can wait. Trying to remember to shake bottle every other day

At first I was really confused about the steeping thing. Everyone want to make it more complicated that it really is. You don't need to take the cap of and let it sit in a dark room (it might expedite things though). All you really need to do is let it sit for a couple of weeks. No taking off the cap. No dark closets. No shaking. Just let it sit.

Not all flavors benefit for steeping either. That's not to say that steeping will ruin some juices, but it won't make all juices better. Also, steeping probably won't make a bad juice good. If you hate a juice when you first try it, you'll probably still hate it after it steeps.

I'm finding this whole thing a bit confusing. Is steeping just essentially waiting till the juice 'ages'? Or is it a must to take off all the tops and expose the liquid to the air?

I have about 30 bottles, will I get the same results just keeping them in a drawer? Or is it more complex?

You'd be fine just keeping them in a drawer. You're really just letting the juice age. I shake my juices everyday, but if I forget it's really not a big deal.

Damn so I wasted about 30 minutes getting all sticky and making my drawer smell by taking off every spout cap...
