I love my ultrasonic cleaner. I got it at Harbor Freight for $75. I do 15 8 minute cycles (2 hours), keeping the temperature under 150 degrees (nic breaks down above 150). Then I let the juice "breathe" with the cap off over night. In my opinion it takes a minimum of a week off the slow steep. The water bath thins the mix so that the flavors molecules can be more active to shake hands, and the vibration is like shaking to also help mixing.
