I've only had a fried turkey once, and didn't really care for it. That's probably because my grandpa usually makes gravy from the drippings, and then I smother my turkey it in. When we deep fried it, there was obviously no drippings, therefore we used 'fake' gravy. Blech, nasty stuff.

When we do ours, we smoke it on the off side smoker. No real drippings then either, though we do put a pan under it for the small amount of drippings and it does improve the gravy a bit.
We buy turkey necks and legs, roast em in the oven then make gravy from that. Works just as good and enough legs to go around to all the kids who want to look like cavemen.
