It was a wonderful Christmas. Not sure when we'll all be together to do this again. Our poor kitties hunkered down in our bedroom because the little dog was just too much for them. Well, that and all the noise! At one point Hux, he 17 month old, came running to his Mama with his hands over his ears! It was pretty crazy in here, but the kids had a blast and they'll remember this Christmas! It was definitely worth all the trouble and I actually learned something new - buttercream frosting can boil and still come back to whip up beautifully!!

Good morning all!

Do you have some extra pumpkin, fresh or canned, leftover from holiday cooking? Here is a savory recipe (pumpkin IS a squash!) that I put together for pumpkin soup that tastes rich and creamy and low in calories and sodium for those watching their weight and sodium intake.

Pumpkin bisque soup

3 cups cooked pumpkin
12 oz (1.5 cups) sweet potato, cooked
1 cup carrots, cooked
1cup 2% milk
1/4 teaspoon garlic powder
1/2 tsp salt

Toss all ingredients in blender and blend until smooth and creamy. Makes 7 cups. Per 1 cup serving: 101 calories, 255mg sodium, 2.9mg cholesterol, 20.8g carbs, 3.1g protein. Enjoy!

    The early awakeners club, LOL. :) AND I don't wish to jinx myself but I haven't woken the husband and it's almost 6:30 here.

    Also, a smart member sent me solutions to this issue and I remembered I have a white noise machine (for use in therapy with really awful old buildings) in the shed. I didn't get to it yesterday (still tending to the husband's food poisoning) but I'm digging it out today. I really hope it helps!

    I attended Midnight Mass Sunday at one of the Local Parishes, and was reminded, that, traditionally, the 12 days of Christmas begins, at least in the Catholic World .. from December 25th and the Nativity, to January 6th and the Epiphany ..

    The roots of some of these Holiday traditions go back to Pagan days .. Yule Logs, Lighted Trees are all examples of things that were adapted by Christians, yet, originally were there to seek the return of the Sun and the end of the long night ..

    When Pope Francis visited the USA, I was mesmerized by his TV appearances, for some reason .. and, although I admit I have not embraced entering the Fold again after most of a lifetime of stray, I know that "The Reason for the Season" still lies within those "12 Days of Christmas" ..

    I sincerely hope all of you had a joy and happiness filled Christmas ..

    PS :: Janet & Mike, your sharing of those wonderful Family Moments made my Day .. :) .. and it appears that a certain Food Processor made a dual appearance .. ?? ;) I guess Santa just stuffed two in his bag .. ;)
