An update on Jax and a pic of my SIL and Jax (his grandma)

So to everybody that has been asking and keeping up on our son Jax here is a quick update. He is doing really good he is 21in long and weighs 7lbs 11oz. He is still on the Nasal cannula sitting at about 30-40% which is very little oxygen help. The only thing we are waiting on for him to finally be able to come is for him to take all his feedings through a bottle. He was doing really good then the last few days has taken a step back so to speak, Dr thinks he just tired and that's the reason for not doing as well. Hopefully he won't take to long to go back to eating the way he was and continue to improve and take the full feedings through the bottle. We are probably looking at anywhere from 1 week to 3 weeks but hopefully we'll get to bring him home with no oxygen and no feeding tube. Thank you for all the support and prayers they have been greatly appreciated, we have come a long way but we are not done yet.

Have Brats marinating in beer, onions, and pepper. Will throw in oven to cook in a bit, then pull out and brown them off on top of the stove while the oven fries do their thing.

Shadow... cooking isn't difficult. Nothing to fear. It should be fun.
Just like my meal tonight... 12 Brats from Wally World, a bottle of beer or can use water or chicken broth, a peeled onion sliced into about 1/4 inch rings and pepper to taste. I let mine soak for an hour or so, then pop Brats and onions into a casserole dish and add perhaps half inch of the marinade, cover with foil and bake in 375F oven for perhaps half hour. Then pan fry them just to brown them up a bit.

Spuds... wash about half pound of spuds per person, no peeling... just cut into about 1 inch chunks and plop into a bowl, add maybe 1/4-1/3 c oil... any kind... then season. Can do simple salt, pepper, paprika or salt and Italian spices or salt and just rosemary or salt, cajun spices ... you get the idea. Spread single layer in baking sheet... I line mine with foil so less clean up. Bake in 400-450F oven until done. Convection will brown quicker. They may stick to the pan or foil... let stand a few minutes and they generally loosen up.

When my kid makes them he just tosses the spud chunks with a little bottled Italian dressing and when done, he sprinkles them with either shredded or grated Parmesan cheese.

Meatloaf... I buy the packets of dry mix and follow the directions. You can change up the catsup or whatever coating you slather on it before baking. I like mustard and BBQ sauce. Hubby likes just catsup... I always cook it longer than the package says. Any leftover meatloaf can be served the next day with pasta and a jar sauce. It also goes good with the spuds above.

See!!! Cooking is easy and should be fun. Even many dishes that have fancy sounding names are quick and easy to make. Chicken Picatta is really nothing more than pan fried chicken breasts, then add a little white wine or stock to deglaze along with a pat of butter and some capers. Coq au Vin is just browned chicken pieces cooked in red wine... basically peasant food... then add some mushrooms and pearl onions on the side. Chicken Paprikash is browned chicken pieces simmered in broth loaded with sweet paprika until done and then the broth is thickened with sour cream and served over thick noodles of some sort, linguini or penne work fine too. So many try to make cooking difficult or something. The hardest part of cooking is learning how long certain things take to cook so you can pretty much get an entire meal out at the same time. That got a lot easier for me when I got my new stove that has a warming burner on top and a keep warm setting for the top oven :D

I must say I do a much better job of cooking than I do of cleaning.

    Haven't done a thing since 1 o'clock but starting to put supper together in my mind. Right now I'm thinking rotisserie chicken, california style vegs and some fried potatoes w/onion :?:

    One day a man decided to retire...


    He booked himself on a Caribbean cruise and proceeded to have the time of his life, that is, until the ship sank.


    He soon found himself on an island with no other people, no supplies, nothing, only bananas and coconuts.


    After about four months, he is lying on the beach one day when the most gorgeous woman he has ever seen rows up to the shore.


    In disbelief, he asks, "Where did you come from? How did you get here?"

    She replies, "I rowed over from the other side of the island where I landed when my cruise ship sank." "Amazing," he notes. "You were really lucky to have a row boat wash up with you."

    "Oh, this thing?" explains the woman. " I made the boat out of some raw material I found on the island. The oars were whittled from gum tree branches. I wove the bottom from palm tree branches, and the sides and stern came from an Eucalyptus tree."

    "But, where did you get the tools?"

    "Oh, that was no problem," replied the woman. " On the south side of the island, a very unusual stratum of alluvial rock is exposed. I found that if I fired it to a certain temperature in my kiln, it melted into ductile iron and I used that to make tools and used the tools to make the hardware."

    The guy is stunned.

    "Let's row over to my place," she says "and I'll give you a tour." So, after a short time of rowing, she soon docks the boat at a small wharf. As the man looks to shore, he nearly falls off the boat.

    Before him is a long stone walk leading to a cabin and tree house.


    While the woman ties up the rowboat with an expertly woven hemp rope, the man can only stare ahead, dumb struck. As they walk into the house, she says casually, "It's not much, but I call it home. Please sit down."

    "Would you like a drink?"

    "No! No thank you," the man blurts out, still dazed. "I can't take another drop of coconut juice."

    "Oh, it's not coconut juice," winks the woman. "I have a still. How would you like a Tropical Spritz?"

    Trying to hide his continued amazement, the man accepts, and they sit down on her couch to talk. After they exchange their individual survival stories, the woman announces," I'm going to slip into something more comfortable. Would you like to take a shower and shave? There's a razor in the bathroom cabinet upstairs."

    No longer questioning anything, the man goes upstairs into the bathroom. There, in the cabinet is a razor made from a piece of tortoise bone. Two shells honed to a hollow ground edge are fastened on to its end inside a swivel mechanism.

    "This woman is amazing," he muses. "What's next?"

    When he returns, she greets him wearing nothing but some small flowers on tiny vines, each strategically positioned, she smelled faintly of gardenias. She then beckons for him to sit down next to her.

    "Tell me," she begins suggestively, slithering closer to him, "We've both been out here for many months.You must have been lonely. When was the last time you played around? She stares into his eyes.

    He can't believe what he's hearing. "You mean..." he swallows excitedly as tears start to form in his eyes,

    Hey Bobbi Great News! Fantastic! The Little Fighter Jax is Really Pulling Through! Mom & Dad Must Be Ecstatic! He's Come So Far! Sure He still has some work to do but It's Going to Be So Cool to Have Him Home!

    This is Such Great News! We Knew He would Pull Through Just a Matter of Time He's a Fighter! He's Had Many Thoughts and Prayers From This Group Right Here! And We Will Keep Em Coming!
