I keep hearing about these and I am wondering what exactly the difference is between a "Mega Atty" and, say, the attys I got with my starter kit?. Will they fit onto the regular batteries / carts that I have?

They will fit on the 510 batts. The point was to have more capacity in the cartridge and they did that by elongating the cartridge and hence enlongated the atomizer chamber to accomodate the extra length of the cartridge. IOW, you have to get both the atty and the cartridge.
