Hey guys just wondering does it matter if the metal part of the mosfet is touching the box as long as the wires and lead are not touching?

Yes it does... the metal tab directly connected to the center pin. Test it with your DMM yourself if you want to verify.

If it's an N-FET, for an unregulated it should be fine, since that goes to ground of 510 anyways - I'd either isolate it or secure it to the box, so there's no sparking though

Plus the metal on the back of the device is a thermal connection and should be connected to something metal (ideally a heat-sink) to keep the device cool as it dissipates power...

As long as batt sag doesn't go below Vgs(th) it shouldn't need to dissipate enough heat to necessitate a heat sink
On the IRLx3034PBF it would be min of 2.5V
