My wife is bringing home leftovers from the local Phở restaurant.
I've messed with brining and curing on my own (including really good smoke-flavored salmon - mostly brine cured, then a quick trip through some cool apple smoke for drying and a finishing flavor) but we haven't done it for competition yet. We've been chatting with other teams though, and we need a few more points here and there to start getting some wins. I think getting the chicken parts in the brine as soon as meat inspection is done will help, if I can get just the right balance between the added flavor and the rub/sauce we use. Tomorrow is the test..
If it works, then next week is the full cook (including a tweaked seasoning and sauce to better match the brined meat.) We're cooking in real 'competition time' from Sat to Sun, including all 4 meats. So the real time to visit is next Sunday around 2pm, when everything is done and we're surrounded by bbq..
