OHhhhhh brineing is the only way :drool: Count me in!

I've messed with brining and curing on my own (including really good smoke-flavored salmon - mostly brine cured, then a quick trip through some cool apple smoke for drying and a finishing flavor) but we haven't done it for competition yet. We've been chatting with other teams though, and we need a few more points here and there to start getting some wins. I think getting the chicken parts in the brine as soon as meat inspection is done will help, if I can get just the right balance between the added flavor and the rub/sauce we use. Tomorrow is the test..

If it works, then next week is the full cook (including a tweaked seasoning and sauce to better match the brined meat.) We're cooking in real 'competition time' from Sat to Sun, including all 4 meats. So the real time to visit is next Sunday around 2pm, when everything is done and we're surrounded by bbq..

I got a DID. I've manage to get it working once. It still works but I'm so afraid of doing it again!!

Rebuildable atomizers come in a variety of 'styles': some are designed solely for silica 'rope' (or other similar) wicks, while others can use silica or SS mesh, then others are really designed for SS wicks only.

"True" genisis atomizers (as created by Raidy - a German modder/designer) are SS mesh wick based.

All I use any more are gennys. The flavor of my juices are more intense - IMO anyway.
