On the watts and volts of the iStick do you pick one or the other to set or do you set both?

If you adjust one it adjusts the other comparably. You are actually just increasing or decreasing voltage input to the electronics. Watts is the measurement of the power produced by the voltage. It's just whichever way you choose to do it.
