Moonie ( and anyone interested of course )....

I finally found my Mom's Peanut Butter Cookie Recipe... Turns out, it was actually where it belonged in one of my recipe programs instead of as a text or scanned file...


1 1/4 C All-purpose Flour
1 Tsp Baking Soda
1/4 Tsp Baking Powder
1/2 C Butter, or margarine ( high fat content margarine is best, Land O' Lakes 80% Veg. Oil )
3/4 C Peanut Butter, Jif smooth
1/2 C Granulated Sugar
1/2 C Brown Sugar, firmly packed, Golden
1 Lg Egg
1 Tsp Vanilla

1. In a bowl, stir together flour, baking soda, and baking powder.

2. Beat together the butter, peanut butter, and sugars until light and fluffy. Beat in eggs and vanilla. Gradually beat in the flour mixture.

3. Wrap dough in plastic wrap and refrigerate until chilled, or about 2 to 4 hours.

4. Take tablespoonfuls of dough and roll into balls with hands. Place about 3 inches apart on greased baking sheets. Using a dinner fork dipped in water, lightly press cookies, flattening and forming a criss-cross pattern on each cookie. If the fork starts sticking, dip it in water again.

5. Bake at 350° until golden brown, or about 10 to 12 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely.

    i live in the very next town south of Port St Lucie, and lived in PSL for many years in the past when i moved there in 1980 population was about 4500, it;s over 100K now

    Thanks i will be making some of these with white chocolate PB and chocolate chips

    Hadn't heard of them I guess.

    I'm not sure I'd feel comfortable buying that clone... it doesn't say who manufactured it. Places such as fasttech and DX ( DealExtreme ) have made me leery about no name products. Since I couldn't afford the real one... I researched the three clones I found ( that had manufacturer names ) and picked the one with the best reviews ( of the one's I read of course )

    Compare the fat content of the PB you use against the Jif so you can adjust accordingly... If you add more fat than the recipe calls for... they will spread out more and be a bit flatter. I think you can counter it with more flour or baking powder... but check with someone that knows so it turns out the best it can for you... I think that you're suppose to adjust something for sea level also... but again, I couldn't say what to do on that subject ( may just be what temp you cook it at )
