I soaked the fillets in milk for several hours then I took a box of stuffing mix like stovetop but it was a store brand and ground it up in the blender thing of Mrs Max's.
Took the fillets out of the milk and right into the stuffing breading then baked it for 15 minutes at 425 deg.

Milk is a good soak for fish... it can even pull the "fishy" taste out of older cuts as long as it hasn't gotten too bad.

Another good breading... Panko with Italian spices...

Another good breading... Panko with Italian spices...
i'd prolly go with panko and itailian spices ,,,,,, i always have the stuff on hand

Ok... in the microwave...

Take some butter or margarine, apple cider ( or juice ), chopped green onions... heat until melted. The amount you'll need will depend on how many boneless chicken breasts or thighs your making...

Cover boneless chicken breast or thighs in melted butter/margarine.... roll in italian panko bread crumbs.... bake in the oven at 350° until just before it starts to brown.... now pour the butter/apple cider sauce over the chicken and return to oven to brown off...

That's a great old song RDS, based on actual events too. Check out the Wikipedia article on the song, you'll see what I mean.

I'm not surprised... it's a common archetypal situation which is why I posted the three songs that typify that. I was actually listening to Chapin's song, thinking how much in common it had with Fogelberg's song and then the one by Elton came on... I placed them in the order that I would have felt would have come naturally had they all been about the same people... Elton's sounding like the start, Fogelberg's coming much further on and finally Chapin's even later in the "story" I was imagining in my mind.

now you're thinking like a DJ from beck in the day when music radio was worth listening to and they could actually play what they wanted instead of some corporate computer generated playlist
