Pumpkin Pie French Toast

Figured I'd pass these ones along...I made some Pumpkin pie french toast at work, over the week end as a breakfast special, and it sold out pretty quick on Saturday. Sunday I had to order extra bread and it sold out even faster. The guy that works breakfast today (Monday) said that people were asking if it was still available. I came home from work and looked up some more home kitchen sized recipes since I didn't really have a recipe for my own...The first one is most similar though. Great use for any pumpkin you have leftover (still) from Halloween and perfect for a holiday breakfast.

This looks pretty yummy even though I'm not a big fan of pumpkin. I might have to alter this recipe and try it using sweet potato.

I gave my daughter a canned pumpkin and sent her your link in an e-mail..she didn't know why i sent the pumpkin home with her! She is a pumpkin freak..and she loves waffles..boy is she in for a surpise when she see's the recipes! Thank you most kindly!
BTW..if you like pumpkin..you should grab a can while you can. There is a shortage. We made pumpkin muffins for Thanksgibing day breakfast....yum! (I should admit right here..my son did it)

My sister in law makes these cookies every year for Christmas. They are pretty good.
