@ShowMeTwice What % of Jacote Plum do you use in a recipe?
I did one at 1% and another at 1.5%. I upped the 1% to 2% just to satisfy my curiosity as to how far I would push Jacote. 2% was good and flavorful in my very basic mix.
1% was a nice light, yet very pleasing, Jacote Plum. 1.5% brought out more of the Jacote flavor.
Here are my notes on how I plan on using it...
As a background or supporting flavor, 0.25%-1%. If your base and/or other flavors are on the lighter side 1%-1.5%. If competing with stronger flavors 1.5%-2% depending on strength of the others. I am certain Jacote could still be pushed further than 2%. How much further? TBD.
Having said all that... you might love it at 2% or more.
Start low and add more if you need to. It's not a flavor that needs anything longer than a day or two steeping when adding to a well steeped mix. It's seeding at that point.
I am very interested in seeing what you come up with.
