I would say your way is easier.I wish I could come raid your freezer and pantry! Beets are YUMmy!!! And stock on hand is a blessing.
I have a pressure cooker. What I don’t have is the driving ambition to actually can lol. When I freeze, I vacuum pack and freeze on a cookie sheet so they’re all stackable in the end. Currently have plenty freezer space, so no pressure (lol) to can.
