It's a long drive.

It's 11 hours. I did it about a month and a half ago straight through. Once I entered Denver and found out I still had another 22 miles to go till we reached the hotel I nearly lost it. Something about those last twenty-two, they broke me.

For the peanut butter pickle people, and the PB & onion people recently commenting, I'll add:

I think we're not used to thinking of peanut butter and pickles as being as compatible as peanuts and pickles, because the major commercial brands of PB add a lot of sugar, and ridiculous ingredients like maple flavoring. The better brands that say "no sugar added" or "low sugar" on the label, taste more like peanuts. Lately I'm loving PB2, pure peanut butter with the calories removed, just wonderful for spreading on a sandwich, or dipping crackers and celery.

A former colleague used to bring peanut butter sweet pickle sandwiches to the office for his working brown bag lunches. He said he grew up eating them.

Anyway, I spent a lot of time in the kitchen Thursday, making a pile of caramelized onions to go in with the pumpkin filling for empanadas I made for a party Friday. A little filling, a few squiggles of caramelized onion, fold, seal, fry, was the plan. But on Friday, after the empanadas were all fried up and cooling, I realized I'd forgotten to add the onions (dammit).

So today as I was digging around for what to have for lunch, I came across those unused caramelized onions. I heated them through with a dash of balsamic just to un-congeal them, mixed in a little PB2, and piled it all on a bun with lettuce. It was maybe the best sandwich I ever, ever had.

I know, I always write too much.

The only challenge in making empanadas is the wrapper dough. The kitchen thing I've never mastered is dough, for bread, pies, empanadas, tortillas, etc. My kitchen counter is too small, and IMO it's just best to let those who do it well, do the job. I use these, and they are really easy to work with, pliable, and they fry up really tasty:

They make a great easy dessert just fried flat and sprinkled with powdered sugar:

And here are two empanadas from a couple of weeks ago when I was kitchen testing. Good to test, because I didn't seal the edges shut, and they popped open a little bit:

The only challenge in making empanadas is the wrapper dough. The kitchen thing I've never mastered is dough, for bread, pies, empanadas, tortillas, etc. My kitchen counter is too small, and IMO it's just best to let those who do it well, do the job. I use these, and they are really easy to work with, pliable, and they fry up really tasty:

Dough looks good, just like in Miami.

Not too thrilled about stocking up on something new but I don’t need that much.
That is exactly what keeps me from trying new toys. Already have too much money into the mods, tanks, coils, etc., that all work together, to get addicted to new shiny pretty things.

I could though. Oh, how I could...

I am waiting for some new flavors. smacuser in this forum put me onto a seller new to me, Freedom Smoke USA, where they have three flavors I've never seen anywhere, saffron, cardamom and thyme. All on the way to me now.

    I have been vaping this for the last several days and enjoying it a lot. The bottle was mixed on 1/20. It was created by a mixer named Elvaperino.

    The dough aspect is really nice.

    I’m surprised it has super sweet added. It sounds sweet without it.

    It's good to me as is, but one could always adjust of course. It's popular on ELR with over 100 comments. I like the dough component of the recipe, very good.

    With Crispy Wafer, Croissant and Pie Crust it has a lot of dough.
