Steeping and color change

I'm nosey and wana know everything,
So what's up with this?
Why do they taste better, and even change colors after time.
Example my strawberry cheesecake was a light reddish clear color. Now it's radioactive orange and taste amazing.
What exactly is going on here
I'm not worried or concerned, just nosey
