I'm looking for a straight up cinnamon flavor to use as a mixer/background note for some recipes I'm working on. I'll list the ones I've tried and my issues with them.
FW Cinnamon Roll - For whatever reason, it seems like when this is included in a mix, the mix turns out harsh and with less vapor than usual. On top of that, I'm not getting the 'cinnamon roll' experience. I can taste it, and I can see how others may enjoy it, but it's lacking for me. I've tried between 4 and 10%.
FA Cinnamon Ceylon - Again, has a harsh taste to it and I can't seem to get a proper % for it. Tried 1-5% and nothing worked. It doesn't taste like a good cinnamon imo, and makes the mix taste awkward.
TFA Cinnamon Red Hots - This one was sickeningly sweet to my tastebuds. I'm under the impression that EM and/or sucralose is added to this by default, making it extremely candy like. Most seemed to enjoy it at around 10%, so I mixed that first and wanted to vomit (no offense to those who like this). Reduced to 5% and same thing, way too sweet for me.
If anyone has any recommendations for a straight cinnamon that would be great. Tbh, even if you know of a nice cinnamon roll that would be nice as well. Thanks guys.
