Thanks Kiwi :) right now it's like I am trying to wrap my head around the whole concept, and doing research and stuff. At least I am a very good cook, used to do it professionally for some years, so I have a slight advantage from the git go, diet wise. But have concerns about how this will affect my life when traveling for any reason...funny part is, with vaping, and being in a happy place with vaping, I never once even thought about lighting up a smoke! Gotta always look at the bright side ;)

So sorry Enaud, this autoimmune crud really sucks. I feel your pain, I was just diagnosed autoimmune diabetic in January. Trust me, the life changes will soon become second nature. And your bonus is, there are so many gluten free products on the market now!

Yup, I'd be dead right now without military insurance. 10k for one month...but my insulin pump and dexcom were completely covered! I did have to fight to see a specialist off post though. Apparently adults can't get type 1 diabetes. (Stupid idiots)

Kiwi, congrats on your recovery!
Enaud, I have gone gluten free by choice.{I think I am sensitive, not celiac} But yes, there are a lot of fabulous products. And some are horrible. I can give you some tips on what products are good and which to avoid. If you like.
Your best bet{for anyone} is to avoid processed foods as much as possible anyway. Eat foods as close to their natural form. Shop on the outside aisles. I eat at about 80% clean.
Good brands right off the top of my head- Vann's{waffles}, Kimmikinnick{make your own personal pizza}, Glutino {cookies, pretzels}, Barbara's{cereal and yummy bars,cookies} Rudy's{breads that are tolerable}
Avoid-Udi's...tastes like cardboard:facepalm:
There are others.. READ LABELS! Even spices can sometimes have ingredients you want to avoid.

Last time I heard, there's sucha thing as gluten free beer. Not sure what the hell that is but. Yeah... Pats pats

It just doesn't use barley or wheat. Typically malted sorghum, but I think there are a few other options out there - don't really remember since I don't pay attention to those conversations. There's always cider too.

I don't really pay attention to the options out there. I'm extremely low risk of ever developing it & there's no way I'd do it by choice. There's zero benefit & it's not a healthy choice to make. And yet a surprisingly large number of people think that it's good for weight-loss or it's just healthier in general (surprise, neither is true) when all it's doing is depriving you from some essential nutrients. I'd rather drink beer & eat bread than take vitamin suppliments. Although the diet-fad people are probably bringing down the cost & increasing the availability of celiac-approved products.
