I am not sure it will do the same as gluten will? I even went to the health food store, but didn't buy it because of the prices. Pretty much since childhood I have hated white gravy, preferring au jus or gravy thickened with corn starch. I never put white (flour) gravy on anything except dusting meat to brown, which may be a reason why I hate turkey. Turkey was dry and nasty and required gravy, which I wouldn't eat. I have learned to brine turkey so it can be eaten without smothering in what I think is nasty gravy but still never associate turkey with anything positive. Kind of like Den not liking chicken :)

When my sister married Paul I was about 8, he came to the family with his gravy and it was the first time I ever knew au jus existed. It was great with beef and is how I always do my gravy. I think I am conditioned that certain things, like the dusting of the meat with flour for stew, is just de rigueur and classics are classics for a reason right? It would be FANTASTIC if the non white flour worked, I could try biscuits and gravy which to me is pretty disgusting even thinking about (probably ate it when I was a kid and got sick so never again!) I have tried the GF pasta and was pleasantly surprised but turned off by the extraordinary price (like 4x the normal cost) so only bought one little box to add to the chicken soup I made for DH since he was sick, and he couldn't tell the difference :)

And in other breaking news, I just bought my first can of Spam yesterday. I bought the "lite" version. I've never had Spam before but it was only $2 a can so thought I would try it. People rave about it, or hate it. I think I am supposed to pan fry it right?

It's way past my bedtime and I think I am a bit punchy without sleep.

Spam: I learned to cook w/spam when living in the Out islands of the Bahamas 28 years ago. They don;'t have cows there so, fish and spam. The ladies there taught me wonderful recipe. You sautee celery, onion, garlic, then mix in some tomato paste and make a nice little sauce, then slice the spam and fry it up in that. Very good with rice, fish, etc.

Gluten Free: I am gluten free and have not missed regular flour much. There are tons of baking mixes that are gluten free (bobs red mill for instance) and they even have the cornbread. For muffins, I am wedded to Namaste Muffin Mix. It's so good. I cut up apples with mine, put in batter, then sprinkle cinnamon and a little raw brownish sugar on top before baking. That's breakfast most days. :) Or bobs red mill gluten free steel cut oatmeal. With fresh blueberries.

It says to add an egg and some oil. I use light olive oil or coconut oil. I also don't even put in the egg, and it turns out fine. I don't like real "cakey" stuff anyway.

Now when I go down the bread aisle in the grocery store I have to hold my nose......It smells. All the preservatives n' stuff, I think it's similar to when you start vaping how bad cigarettes smell? Homemade stuff is just cleaner, no doubt.

GL! PM me if you want product suggestions. I am not gluten intolerant, per se, and do NOT have celiacs disease (had a biopsy recently for all that). But I find that as soon as I start back on it my joints hurt more, esp. my knees and back, so I just stay off it.

I can also make a really nice pie crust out of cooked rice! It's delicious. For quiche, too.

Gluten free pasta is not to my liking, so I use rice noodles. GF pasta is sort of......rubbery to me.

Yeah, eating healthy costs more. There is NOTHING more important than what you put in your boddy, I mean, why not cut corners elsewhere? :) JMHO. I do not skimp on my food. I just don't buy other stuff, and I am careful with gasoline and trips in truck, and with my lights and heat, etc. But I buy the very best food there is.

I'm quite sure you can put up the covers in TREASURE CHEST. That is an approved area to give stuff away for free. Can you just put up some REO covers once a month or two there?

I've paid taxes since I was 15....

....but I also have seen professionals that had their lives turned upside down, elderly with nobody that gives a damn, and folks in wheel chairs and walkers. I do not think most folks have "Live off the government" in their career plan or choose this route without having had a few hardships and nowhere else to turn. Living on less than a fourth of my previous wages hasn't been a picnic

Aw. I'm really sorry for your situation. I worked for 35 years, sometimes 3 jobs, when my body gave out on me (wonder why? :lol:) I don't remember not working, I started as soon as I was legal.

Decades of paychecks with that SS deduction taken out...unfortunately I didn't *quite* make it to retirement age before having to use it. Getting injured, dealing w/chronic pain, and being poor is not nirvana. It requires a huge amount of self discipline and tenacity.

I would do *anything* if I could work 2 jobs again, but I can't bend over to pick up something off the floor anymore :lol: Good health, we all take for granted, I know I did. (which is why many people who become ill or injured later see it as a kind of blessing, because they gain a lot of insight into things during their trials and tribulations. It often improves them in a deep way)

Pace yourself and concentrate on getting your health back. Just worry about you and keep a smile on your gorgeous face.

(Yeah, I see young people who can work and don't. I am busy being accountable for myself. It seems to have become fashionable to be angry these days, and I meet a lot of people who are angry about what "other people are doing." I don't have energy for that wasted emotion. I need it to help dogs and people, and also my physical rehab. ) The world has never been fair, I guess i never expected it to be. I just know that this is the life I was given, and I"m trying to reach the potential that I am capable of, so I don't compare myself to others or their situations. I would not change places with anyone else on the planet. Cuz I haven't walked in their shoes. We all have to be grateful for what we do have.

My very best wishes for your progress and continued better health. You will get there, just keep your eye on the ball, and take little steps. ;) Keep a journal and you will see that you are not standing still.....ever. You will get there!

Take it slow and easy, hope it melts soon too.

I had trees go acrosss my power lines in Dec when we had the ice storm. Didn't matter since we had already been w/out electricity for 3 days before those trees fell over :lol:

Get those batts charged up. How long have you all ever been w/out electricity in that town? It's different everywhere it seems. More trees = more problems.

I think back in 2000 that ice storm put us out of electricity for well over 10 days. By day 4 you're ready to rip your hair out.

Just checking in, been real busy rehabbing my back injury (boy this one really scared me) and been in physical therapy for 7 weeks now. I think I'm JUST starting to make some progress away from pain. Got a TENs unit and that has helped a whole lot

We're in no danger here...our power outages don't normally last much more than a few minutes....the worst in 10 years has been 12 hours. Up until recently, we've had a super stable grid. But no worries...if we lose power we're well stocked on supplies and can keep warm and busy. :D

Glad you are getting some relief! :)

The snow has let up a bit, but we have a short bit heading our way and then the temps should rise and the melt off will begin. It's crunchy out there. The trees are creaking and snapping...thought for sure a big one was going to come down behind our house, but oddly enough it didn't.

Here's a picture I took a short bit ago.
