This one is amazing, I really enjoy it. So throw it in the fridge before you go to bed, make sure the cavity is facing upwards so that the brine will soak in there as well. Also when you take it out of the brine tomorrow rinse it off before you cook it. Another thing to remember is when you pull it from the smoker wrap it in tin foil and let it sit for about 15 minutes, it will keep cooking during this time and will allow for the juices to sink back in and settle.

this is the winner! I have all these ingredients, except my garlic is powered. Im salavating just thinking about it! TY ogfish, this will be perfect!

i read these recipies online but if i get stumped or run into a problem its a brick wall and an hour long goooooogle search.
kinda want to leave work early to start the process!
its gettting really cold at night, could i leave it outside for the night? prob going to dip to 30ish tonight.
im going to be bringing a lot of it to work to share with coworkers since my wifey doesnt eat meats, tho she does eat fish.
should i use a pan to collect drippings for gravy?

Oi, Lisa! Congrats on completing the move, but so sorry you're hurting!!

I threw my back out when I moved in October. I was completely moved to the new place, old place cleaned and everything, and bent down to scoot a tote back into my bedroom closet and *WHAMO!!* it felt like something exploded in my back, I fell face first on my bed and I spent the next 6 hours face down trying to inch my way to the 800mg ibuprofen bottle. I'm just happy I was in my bedroom when I fell, and landed on my BED face down and not in the bathroom or kitchen!! Luckily after I got the ib in me and stayed in the face down position for the rest of the night I was able to get to a semi-standing position and then work my way back to normal posture by the next day. It was scary, though. All by myself unable to move for that many hours. *Shudder!*


OMG! You poor thing! I know of what you speak!! One time I was loading lumber on this cart we had - I was helping hubby build something... it's the only time he was allowed to boss me, so he nicknamed me 'Raspail' his helper after headless wonder in Red Dragon :X Anyway, I bent funny, back popped, I fell to ground behind the wood cart =] Hubby could not get me out, so I crawled out when I could move and to the emergency room we went :p dunno what they gave me, but it was terrifying, but at least I had hubby! You poor thing!!

Yes the drippings for gravy from this are fantastic! mid 30s should be perfect for it as well, you just don't want it to freeze. If you do it out side make sure you have it covered well. One thing I will say is read up on how to loosen the bird up for the smoker so that way it smokes evenly. You looking at a wet or a dry rub for it?

which is your preference(sp)? im am open to your suggestion, if i am short an ingredient ill hit up the market tonight.
and by loosen the bird, do you mean how to gently seperate the skin? i read somethin about that

I feel for ya, Lisa. I can look back on my predicament and laugh, and even wanted to laugh at the time but any movement at all was excruciating! I was literally inching my way across my king-sized bed to the bedside table for the pills and bottle of water. Moving 6 feet took me HOURS!! (Honestly, thinking about it now makes me laugh a lot...what a sight that must have been, thank goodness I had already taken a shower and gotten dressed, if I would have had to call an ambulance or something...Oi!!) LOLOL

Yes gently seperate the skin, it is really a good idea to do so. I'll give you two rubs one wet one dry. One is more of a normal rub the other has a cajun kick to it.

1/4 cup olive oil
1 tablespoon Worcestershire sauce
1 tablespoon white wine
1 tablespoon balsamic vinegar
4 teaspoons rosemary chopped
4 teaspoons thyme chopped
4 teaspoons onion minced
4 teaspoons garlic minced
2 teaspoons sage
2 teaspoons salt

Mix together real well with this, then pull the skin and rub under the skin for best results.

Okay this one is a bit crazier...

1/4 cup coarse salt (kosher or sea)
3 tablespoons sweet paprika
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons dried thyme (preferably ground)
2 tablespoons dried oregano
1 tablespoon freshly ground black pepper
1 tablespoon freshly ground white pepper
2 teaspoons ground dried sage leaves
2 teaspoons cayenne pepper

mix it all up in something you can shake it with so that way you can ensure it is mixed well. Pull the skin and rub under the skin. Don't use all of it or if you due just make up a smaller batch to use for the baste with this one. For the baste take 1/2 cup butter and 1 tablespoon lemon juice, melt the butter add the lemon juice and add some of the rub to it and then use it to baste the turky each half hour for the last two hours you smoke it.
