zucchini, corn, potatoes, summer / any squash, asparagus, tomatoes, Green peppers, Red and Yellow Peppers, Carrots, Onions, Mushrooms, and Artichoke Hearts, Peeled Eggplant. Basically if you can grill it you can smoke it just gotta watch it so it doesnt get to mushy. If you want info on ribs i'll pull out evernote again for ya lol.

If I smoke brisket this weekend i'll also smoke some corn, and cook up some garlic butter herb rice. Also on the ribs, go with either spare ribs or dino bones if you can get them.

5- MMmm smoked mushrooms and zucchini. Love that with either salmon or brisket.

Sure can freeze it. Also with the ribs remember you are going to want to put the rub on it at least 6 hours before putting it in the smoker. Also it may be cheaper to get short ribs or go to a butcher if you can since you're not going to be cooking for 5 people. I know here I can go to Smiths or Albertsons and get decent ribs for like $15 and have enought to feed 3 people.
