When you press the fire button the screen displays the voltage setting you have chosen, not the charge of the battery (unless you have changed the settings). Hold down the left button to display the battery charge.
I'm assuming that in the second picture you are using the meter to check the remaining charge on the battery itself. Correct me if I'm mistaken.
These are PWM devices. A standard meter - even a Fluke - can't read their voltage output correctly. (Put it on an oscilloscope and see what happens...)
