I used to work at Falls Dairy in Jim Falls, a large production dairy,about5 years ago and my fav was colby about 2-3 min. after they salted the vat.
p.s. especialy good first thing in spring when the cows switched to grass!

Had some 12 year old White Cheddar I picked up in the Dells a year ago - dang that was gooooood.
We've got a little cheese shop in town here called Kraemer's - they make the BEST cheddar cheese curds - and Thursdays you can get them FRESH... mmmmm

mmmm I love squeaky curd, too!!! There's a little factory out here in Avoca called Meister Cheese Company that makes some yummy curd. I gotta try some of the Kraemer's.

Oh I love Cheese!!! My personal favorite(besides Sharp Cheddar)is Asiago....Just cant get enough of it!!

By far, though, one of my favorites is one I can't get anymore ..... when I was a younglin' - we ran a hobby farm. We had a couple of goats. We made a soft cheese spread with the goat milk, mixed it with onion and caraway seed, and ate it as a spread on crackers....mmmmm, fantastic stuff...
We also made a hard cheese, let it cure for a good 9 months - very sharp, that was, and a very dry cheese, but also fabulous!
We could get fresh cheese curds in Iowa, too, where we could buy them still warm from the vat...bliss!
Damn, now I'm hungry? Anyone got some provolone or swiss?

No, not soft - but SUPER crumbly. It was impossible to cut a slice. It fell apart like good aged cheddar should.
