What's the "T" mean in JoyEGO-T and JoyE 510 T?

The "T" is actually a small cross piece in the atty that the cartridge or tank is punctured by. You can use a non-T cartridge on a T atty, but not a T cartridge on a non-T atty. If the hole created by the pucture gets too big, or if you twist the tank and the T pops the cartridge/tank cap off, you can have a big leaking issue.

You don't use an atty with a cartomizer (its built in). Think of the atty as your lighter.

Here's an example of a 510 T-system tank and cartridge:

And here's an example of a 510, bought as a 510-T, with a cartomizer instead of an atty and cart (the smaller PV that looks like a pen):

So is it just a bigger version of a cartomizer than say the JoyE 510's cartomizer?

In short yes (no pun intended). It will by bigger by only a small amount though. As Trucapri has mentioned though there are issues with usint a "T" system (not to be confused with a proper tank). Some swear by them others avoid them.

They are not cartomizers. Cartomizers aka cartos are standalone units that hold juice AND have their own heating coil inside and screw directly onto the battery, and they are what most people end up preferring for everyday vaping.

A -T tank system is still an atomizer + cartridge system except the atomizers are more expensive and have a spike in them and the cartridges are clear tanks that are punctured by the spike. I think about 50% of people who buy -T systems end up switching to cartomizers.

There are other kinds of totally unrelated 3rd party tanks which function more like cartomizers - spool-shaped clear tanks with either CE2 carto guts inside or with an entire side-punched stainless steel cartomizer slid throught he middle of the tank and surrounded with liquid.
